This is a smooth and creamy cheesy soup, can be served as a side or main course. This is the broccoli you will make time and time again. Ingredients:
1 1/2 lbs brocolli, fresh or frozen |
1 pint half and half |
2 cups cold water |
1 lb. velveeta cheese |
3/4 tsp. salt |
1/2 tsp. pepper |
1/2 cup corn starch mixed with 1 cup cold water |
Directions:
1. Steam broccoli until tender (this can be done in the microwave 6 min per pound). Place half and half and water in the top of a double boiler. Add cheese (cut in pieces), salt and pepper. Heat until all the cheese is melted. Add broccoli. Mix corn starch and water in a small bowl. Stir into the cheese mixture in the double boiler, and heat over simmering water until soup thickens. |
