Made this for family visiting over Christmas. It is a very hearty soup. This recipe from recipezaar. Ingredients:
1 bunch broccoli or 2(10oz) packages frozen broccoli |
3c chicken stock |
1/2c chopped onion |
4tbs butter |
5tbs flour |
1qt. half and half |
salt and pepper |
1c grated cheddar cheese(optional) |
Directions:
1. Cook broccoli in chicken stock with onions till soft 2. Place in blender and blend quickly 3. Leave small pieces of broccoli 4. Make a roux using butter and flour 5. Cook 3 mins,stirring constantly 6. Add broccoli and stock to roux 7. To avoid lumps,stir constantly till thickened 8. Thin to preferred consistenct with cream. 9. Add seasonings (and cheese) and serve |
