This is a wonderful winter recipe! Add some crusty bread to this! Ingredients:
8 c. of broccoli florets |
3 tbsp. of margarine |
3 tbsp. of all-purpose flour |
2 c. of milk |
2 tbsp. of margarine |
1 chopped onion |
1 chopped stalk celery |
3 c. chicken broth |
Directions:
1. Start by adding 2 tbsp, of butter to your pot. 2. Then Saute the onion and celery until soft. 3. Next you can add the broccoli and broth. 4. Allow this ti simmer approx. 10 min. 5. You will want to puree the mixture in a food processor before returning the mixture to the pot. 6. In a small pan, make a rough with 3 tbs. of butter, stirring in flour, and adding milk to the rough. After this is thick, pour this into the soup and allow soup to thicken. 7. Add salt and pepper to your individual taste. |
