This is not a pureed soup but if you like that way feel free. It is the same one I make at the cafe I work at.I sent this in so I wont have to write it down for the people that ask for the recipe.I hope you enjoy it as well. Ingredients:
2 lbs frozen chopped broccoli |
1 onion, chopped |
2 garlic cloves, minced |
1/4 teaspoon ground sage |
1 pinch dried thyme |
1/4 teaspoon pepper |
1/4 cup butter |
1/4 cup flour |
2 quarts water or 2 quarts chicken broth |
1 quart half-and-half |
Directions:
1. place the 6 first ingredints in a 5 qt pan. 2. add water or broth to just cover the broccoli. 3. heat to boiling on high then turn to med heat. 4. simmer briskly 45 min.or until liquid is reduced by half. 5. melt butter and add flour to make a blond rue. 6. add to broccoli stirring well. 7. turn off heat. 8. add 1 qt.half and half. 9. stir and enjoy. |
