Cream Of Asparagus Soup Low Fat

Creamy Asparagus soup.with a blend of veggies. Made with low fat and fat free ingredients.
Ingredients:
1 to 1 & 1/2 pounds asparagus
2 cups diced potatoes, optional
1 cup thinly sliced celery
1 onion, tennis ball size, small chop
2 medium size carrots, sliced thin, for color contrast
1 can fat free cream of chicken soup
1 can fat free chicken broth
4 cups water
seasonings
1 tsp ground sage
1/2 tsp crushed dried thyme
1/2 tsp ground cumin
1/2 tsp ground coriander
1 tsp or 2 cloves minced garlic
salt and pepper to taste. i also used 1 tsp low sodium bacon salt
for a thickener: 1 tbs lour and 1/4 cup water or ! tbs corn starch and 1/4 cuo water or 1/2 cup dry instant mashed potaot flakes
Directions:
1. Add water, cream soup, and chicken broth to pan.
2. Peel and slice carrots very thin and add to pan
3. Peel and dice potatoes and add to water
4. Slice Asparagus in 1 to 2 inch pieces. If the stems are a little tough, peel last 3 or 4 inches to remove tough outer covering and then slice and add to water
5. Add chopped onions and celery
6. Bring to a boil then turn down to med high or medium. You want a slow, constant boil.
7. Add seasonings. With the seasonings add as much or as little depending on family preference
8. Vegetables should not be crowded. Lots of room to move around.
9. Stir occasionally
10. When veggies are fork tender, use one of the methods to thicken the soup.
11. Blend flour or corn starch with water and mix until smooth. Add slowly to soup while stirring.
12. If you are using dry mashed potato flakes, sprinkle dry flakes over top of soup and stir VERY gently to blend.
13. Taste and adjust seasonings. If it needs more onion or garlic that can be added with onion and garlic powder.
