Cream of any Kind of Vegetable Soup |

This recipe is so easy and good. I like to make it in cold weather and have a cup when I come in from a cold walk. It can be made with most any kind of vegetable. Ingredients:
1 cup chopped vegetables (see below for suggestions) |
2 tablespoons uncooked white rice |
1 1/2 cups chicken broth (or granular chicken bouillon and water ) |
1/2 cup milk or 1/2 cup cream |
broccoli or zucchini |
potato, use 1/2 cup potato and 1/4 cup chopped onion |
carrot, use 1/2 cup carrot and add 1/4 cup chopped onion (and a pinch dill weed) |
asparagus, can use canned cut asparagus |
Directions:
1. Put all ingredients except milk (or cream) in medium sauce pan, bring to a boil, cover, reduce heat and simmer for 20 minutes. 2. Let cool, then pour into blender container and blend till smooth. 3. Pour back into sauce pan, stir in milk and heat. |
