Nothing like doctoring up a cake mix with a little cream cheese...super simple but delicious and fun. I used a devil's food mix and Mounds pieces instead of chocolate chips. Recipe courtesy of Favorite Recipes from Quilters and Sherry Sommers of Millersburg, OH. Ingredients:
18 1/4 ounces chocolate cake mix |
1 1/3 cups water |
1/2 cup vegetable oil |
3 eggs |
8 ounces cream cheese, softened |
1/3 cup sugar |
1 egg |
1/8 teaspoon salt |
6 ounces chocolate chips |
Directions:
1. Heat oven to 350 for shiny metal or glass pan or 325 for dark or nonstick pan. 2. Beat cake mix, water, oil, and 3 eggs in large bowl on low speed 30 seconds, then on medium speed 2 minutes, scraping bowl occasionally. Set aside. 3. In a separate bowl, cream together cream cheese and sugar. 4. Add egg and salt and mix well. 5. Fold in chocolate chips. 6. Fill paper-lined muffin tins 1/2 full with batter. 7. Drop 1 rounded teaspoon cream filling on each cupcake. 8. Bake at 350 for 25 minutes. |
