A simple and easy to make coffee cake that my brother requests in lieu of a traditional birthday cake. Not overly sweet and a family favorite. Ingredients:
2 cups brown sugar |
1 cup oleo (softened) |
3 cups white flour |
1 teaspoon baking powder |
2 extra-large eggs (beaten) |
1 cup sour milk |
1 teaspoon baking soda |
1 teaspoon vanilla |
1 teaspoon ground cinnamon |
1 pinch salt |
Directions:
1. Crumb together brown sugar, flour, oleo and baking powder. 2. Set aside 1 cup of the crumbed mixture to use as streusel topping later. 3. To the remaining crumbed mixture in the bowl, add eggs, sour milk, baking soda, vanilla, cinnamon and salt. 4. Mix well. 5. Pour into greased/floured 9 x 13 pan. Sprinkle 1 cup crumb mixture over the top of the batter. 6. Bake in 350 degree oven for 30 minutes. |
