I don't remember a Christmas without Grammy making these. They are so good! I don't know how many this recipe yields as she just scribble it down on a piece of paper and I was lucky enough to find it! Too bad we only got them once a year! Read more ! Ingredients:

2 8 ounce packages of cream cheese, regular, at room temperature |
1/2 cup sugar |
2 eggs |
1 teaspoon vanilla |
crust |
2 1/4 cups graham crackers, put in ziploc baggie and crush with rolling pin |
3 tablespoons sugar |
1/2 cup melted butter |
1 can cherry pie filling for topping |
Directions:
1. Filling: 2. In a mixing bowl, cream the cream cheese. 3. Beat in eggs and vanilla. 4. Whip unitl smooth and creamy. 5. Crust: 6. In another bowl, add crushed graham crackers 3 tablespoons sugar and melted butter. 7. Mix thoroughly. 8. In small cup cake tin pan, press down 1 tablespoon of graham cracker mixture in each space. 9. Top with 2 tablespoons of cream cheese mixture. 10. Bake at 350 degrees for 10 minutes. 11. Top with a dollop of cherry pie filling. 12. Refrigerate for at least 1 hour. |
