Cream Cheese Stuffed Mushrooms |

From a local cooking show. These are much better than I thought they were going to be. Ingredients:
2 lbs mushrooms, medium sized work best |
6 tablespoons butter, softened |
1 (8 ounce) package cream cheese, softened |
1/2 cup blue cheese, crumbled |
2 tablespoons green onions, finely chopped |
Directions:
1. Remove mushroom stems; chop enough stems to measure 1/2 cup. 2. Cook half of mushroom caps in 3 tablespoons butter over medium heat 5 minutes; drain. 3. Repeat with remaining mushroom caps and butter. 4. In as samll bowl, combine cream cheese and blue cheese, mixing until well blended. 5. Stir in chopped stems and onions; fill mushroom caps. 6. Place on baking sheet; broil until golden brown. |
