Cream Cheese Pear Muffins |

I had a craving for muffins and the only thing to work with i had was dried pears. They came out delicious! I'm sure any dried fruit could be used as a substitute Ingredients:
1/2 c. butter, softened |
1/2 c. whipped cream cheese |
3/4 c. sugar |
2 eggs |
1 tsp vanilla extract |
1 c flour |
1/4 tsp salt |
3/4 tsp baking powder |
1 c. dried pears, cut into pieces |
Directions:
1. Preheat oven to 350 F 2. Spray muffin tins with nonstick cooking spray 3. Beat together eggs, sugar, butter, cream cheese and vanilla 4. Mix four, baking soda and salt in separate bowl 5. Mix in dried pears 6. Pour into greased muffin tin, filling each cup about 2/3 7. Bake for 25- 30 minutes, until a toothpick comes out clean 8. Makes 12 muffins |
