This is from the 2003 Cooking Light recipe book. Usually cream cheese frosting is made with butter, but you will not even know the butter's missing. This is a great frosting! (Makes enough for a 9x13 cake.) Ingredients:
2/3 cup light cream cheese (about 5 oz) |
1 teaspoon vanilla extract |
3 cups powdered sugar |
Directions:
1. Place room temperature or softened cream cheese and vanilla in a large bowl. 2. Beat with a mixer at medium speed until fluffy. 3. Add powdered sugar, beat at low speed until smooth. 4. This makes enough for a 9x13 cake - for an 8 or 9 cake, doubling the recipe works well. |
