The ideal frosting for carrot cake, it's never come out grainy, just perfectly thick and creamy. Ingredients:
8 oz cream cheese; room temperature |
3 tablespoons unsalted butter; room temperature |
1/2 cup + 2t confectioner's sugar |
1 teaspoon vanilla extract |
Directions:
1. In a large bowl, combine the cream cheese and butter. 2. Using an electric mixer set on medium-high speed, beat until smooth. 3. Reduce the speed to low, add the confectioner's sugar and beat until 4. smooth. 5. Beat in the vanilla until well blended. 6. Use immediately or cover and refrigerate for up to 1 week. 7. Bring to room temperature before using. 8. Yield: 1 1/2 cups |
