Cream Cheese Filling For Muffins |

This is my version of a recipe that we used when I worked in a bakery. It makes a great addition to any of the muffins from my Basic Muffins recipe. It is especially good in blueberry muffins. Ingredients:
12 ounces cream cheese |
1/4 cup plus 2 tablespoons sugar |
1 egg |
Directions:
1. Combine cream cheese and sugar until blended, add egg and mix until smooth.
2. Pipe or spoon filling into center of muffin batter before baking muffins.
3. Bake muffins as usual.
