Pretty coconut speckled candies rolled in grated chocolate but you could coat in finely chopped nuts or chocolate sprinkles. Can substitue almond extract for vanilla and coat in chopped toasted almonds. Ingredients:
1 pkg (8oz) reduced-fat cream cheese |
sugar substitute equal to 1/3 c sugar |
1 tbs sugar |
1/2 tsp vanilla |
1 c flaked coconut |
1 square (1oz) unsweetened chocolate ,grated |
Directions:
1. In small bowl,beat cream cheese,sugar substitute,sugar and vanilla until smooth. Stir in coconut. Refrigerate 30 mins or till easy to handle. 2. Shape into 1 balls;roll in grated chocolate. Refrigerate at least 1 hour. Store in airtight container in refrigerator. 3. I did the recipe using Splenda. |
