Blueberries! These Cream Cheese Blueberry bars are lighter than the triditional recipe. These are a delight for any get-to-gether. Recipe is adapted from the Weight Watchers Magazine 1992. Ingredients:

1 1/2 cups all-purpose flour |
3-oz quick oats |
1/4 cup firmly packed light brown sugar |
1/2 tsp. cinnamon |
1/2 cup reduced-calorie tub margarine, well chilled |
8-oz non-fat cream cheese |
2 tbs. sugar |
1/2 egg substitute |
2 tbs. grated lemon zest |
1 tsp. vanilla extract |
1 1/2 cups fresh blueberries |
Directions:
1. 1)Preheat oven to 350. Spray an 11” x 7”-inch baking pan with non-stick cooking spray. 2. 2)In a medium bowl, whisk together flour, oats, brown sugar and cinnamon. With pastry blender or 2 knives, cut in margarine and 2 tablespoons of water until mixture forms a crumbly dough. Press dough into the bottom of prepared pan; bake 10 – 15 minutes, until golden. 3. 3)In a small bowl, with electric mixer on high speed, beat cream cheese and sugar until fluffy. Add egg substitute, zest and vanilla; beat until smooth. Pour cream cheese mixture over crust; sprinkle evenly with blueberries. Bake for 25 – 30 minutes, until set.
