Cream Cheese And Fruit Filled Spice Cake Muffins |

This week's muffin started as a simple 'let's turn spice cake into a muffin' and then I decided that was too boring and that some filling was in order and they turned out great! Ingredients:
muffins |
2 c. whole wheat flour |
1 tsp. baking soda |
1/4 tsp. sea salt |
1/4 c. brown sugar |
2 eggs |
2/3 c. milk |
1/2 c. applesauce |
1/4 c. honey |
1/4 c. olive oil |
1 1/2 tsp. vanilla extract |
1 tsp. cinnamon |
1/2 tsp. nutmeg |
1/4 tsp. all spice |
filling |
fruit preserves (i like raspberry, my sister likes orange marmalade) |
cream cheese, (melted in microwave & blended with a few drops of vanilla) |
Directions:
1. Mix all muffin ingredients in large bowl until well blended. 2. Place paper liners in muffin tray. 3. Fill muffin cups 1/3 of the way full with muffin mixture. 4. Place a dollop of cream cheese on top of muffin mixture. 5. Spoon 1 tablespoon worth of fruit preserves onto cream cheese cube. 6. Cover fruit with more muffin batter, enough to completely cover cream cheese and fruit. 7. Bake at 350 F for 22-25 min. 8. **Makes 1 dozen regular sized muffins. |
