We wanted tacos one night, but we didn't have any shells or tortillas, so I came up with this skillet taco meal, my niece gave it the name Crazy Skillet Tacos. Ingredients:
1 lb lean ground beef |
1 (19 ounce) can kidney beans, drained and rinsed |
1 1/2 cups salsa |
1/2 cup water |
1 (1 1/4 ounce) package taco seasoning |
2 medium tomatoes, diced |
2 cups tortilla chips, slightly crumbled |
1 cup cheddar cheese, shredded |
2 cups lettuce, shredded |
1 cup sour cream |
Directions:
1. In a large skillet, cook the ground beef over medium heat, until no longer pink, 5 minutes, breaking up chunks, drain fat. Add the beans, salsa, taco seasoning and water, reduce heat and continue to cook, stirring often, for 8-10 minutes, until the mixture thickens slightly. 2. Sprinkle the meat mixture with the tomatoes, followed ny the tortilla chips and the shredded cheese, cover and cook 3-4 minutes, until the cheese melts. 3. Remove lid and remove from heat, sprinkle with lettuce, dollop with sour cream. Serve out of the skillet. |
