Crazy Mixed Up Cabbage Salad |

Inspired by numerous recipes for cabbage salad,I came up with my own.A good winter salad when selection of veggies is slim.The beans not only add texture but protein. Ingredients:
1 cup finely shredded red cabbage |
1/2 cup white cabbage,any kind |
1/2 a green pepper,diced |
1/2 a small sweet white onion,such as vidalia,thinly sliced |
1 large carrot,grated |
1/4 cup sliced pepperocini,or banana peppers |
1/2 a 15 oz can,kidney beans,drained & rinsed |
2 tbls.sugar |
1/4 cup white vinegar |
1/2 cup vegetable oil |
salt & pepper to taste |
Directions:
1. In a large bowl combine all vegetables,toss to mix well. 2. In a small bowl,whisk sugar & vinegar,slowly drizzle oil,while continuing to whisk,until well blended.Note;this may be too much dressing for the salad.Slowly add to cabbage mixture,tasting until desired dressing amount is achieved.Add salt & pepper to taste. 3. Chill for 15-30 minutes before serving. |
