Ingredients:
2 quarts cold cooked rice |
1 cup salad oil |
1 lb cabbage, chunked |
1/2 cup shredded carrot |
1 cup diced onion |
1/2 cup diced celery |
1/2 cup diced bell pepper |
1 red bell pepper, diced |
1/2 cup chopped scallion (tops) |
1/2 cup chopped scallion (white part) |
1 tablespoon minced garlic |
10 ounces ham, cubed |
10 ounces chicken, cubed |
8 ounces andouille cajun sausage, cubed |
1/2 cup soy sauce |
1 cup peas |
1 tablespoon cajun seasoning |
1 teaspoon black pepper |
2 teaspoons salt |
Directions:
1. In a large pot of hot oil, lightly cook all the meats and vegetables (except peas) over high heat, stirring often. 2. Add seasoning and peas. Simmer 4-5 minutes. Saute cold rice with a little salad oil. Add fried rice garnish. Fry and stir well. |
