A zippy, super-colourful coleslaw, perfect for those who are low-carbing or diabetic. One of my all-time favorites, especially with a blend of red and Savoy cabbage! Cook time is refrigeration time.
Ingredients:
8 cups cabbage, shredded
1 cup cooked corn, room temperature
1 jalapeno pepper, seeded and minced
2 tbsp cider vinegar
1 tbsp splenda
1 cup fat free miracle whip
1 1/2 tbsp prepared mustard
1/2 tsp celery seed
Directions:
1. Combine cabbage, corn, and jalapeno. Set aside.
2. Combine vinegar, Splenda, mayo, mustard, and celery seed. Mix with cabbage mixture.
3. Refrigerate several hours.
