A zippy, super-colourful coleslaw, perfect for those who are low-carbing or diabetic. One of my all-time favorites, especially with a blend of red and Savoy cabbage! Cook time is refrigeration time. Ingredients:
8 cups cabbage, shredded |
1 cup cooked corn, room temperature |
1 jalapeno pepper, seeded and minced |
2 tbsp cider vinegar |
1 tbsp splenda |
1 cup fat free miracle whip |
1 1/2 tbsp prepared mustard |
1/2 tsp celery seed |
Directions:
1. Combine cabbage, corn, and jalapeno. Set aside. 2. Combine vinegar, Splenda, mayo, mustard, and celery seed. Mix with cabbage mixture. 3. Refrigerate several hours. |
