Craze-E Chicken, Black Beans & Apple Rice |

This is a combination of sweets and spices that turned into really yummy comfort food. Apple cider and fresh apples plus curry powder created a smooth sensation for the taste buds. I put this in the crock-pot at lunch and it was ready for dinner. For this recipe I used Gala apples, Lundberg Wild Blend, and organic black beans. Ingredients:
4 -5 bone-in skinless chicken thighs, washed |
1/2 teaspoon garlic powder |
3 cups apple cider |
2 cups chicken broth |
2 cups fresh apples, peeled and coarsely diced (any variety) |
2 medium carrots, washed and coarsely diced |
1 teaspoon curry powder |
1 tablespoon dried onion flakes or 1 small onion, diced fine |
2 teaspoons dried parsley |
1/2 teaspoon kosher sea salt |
1/2 teaspoon fresh ground pepper |
1 (14 ounce) can black beans, drained and rinsed |
1 cup wild rice (lundberg wild blend is wild rice and brown rice blend) |
1 turkish bay leaf |
Directions:
1. In a 6-quart crock-pot on high heat, add apple cider and chicken broth. 2. Rinse chicken thighs and remove skin; place in crock-pot. 3. Prepare apples and carrots. Drain and rinse beans. 4. Add apples, carrots, curry powder, onion, garlic powder, and parsley. 5. Add salt, pepper, beans, bay leaf and rice. 6. Stir to mix ingredients. 7. Reduce crock-pot to low heat setting and cook for 6-8 hours. 8. Remove all chicken bones and bay leaf before serving. 9. NOTE: Bone-in chicken thighs can be removed, deboned, shredded and added back to the crock-pot - be sure to remove all the chicken bones before serving. |
