Ingredients:
4 large onions, chopped
4 medium-size green peppers, chopped
4 cloves garlic, minced
2 stalks celery, chopped
1 cup butter or margarine
2 tablespoons all-purpose flour
4 pounds crayfish tails, peeled
2 cups hot water
2 teaspoons salt
1/4 teaspoon pepper
1/4 teaspoon red pepper
1/4 cup chopped green onion tops
1/4 cup chopped fresh parsley
hot cooked rice
Directions:
1. Sauté onion, green pepper, garlic, and celery in butter in a large Dutch oven over low heat 30 minutes. Stir in flour. Add crayfish tails, water, salt, and pepper. Cover and simmer 10 minutes or until crayfish are tender. Stir in onion and parsley. Serve over hot cooked rice.
