This is one of our most favorite dishes this time of year when the crawfish are in season. You can make this even better tasting with leftover boiled crawfish. Yum! Ingredients:
1 lb. crawfish |
4 cups cooked rice |
4 cloves garlic, chopped |
1 cup chopped onions |
1/2 cup chopped celery |
1/2 cup chopped bell pepper |
1/4 butter (i use diet butter) |
1/2 cup each green onions & parsley |
salt, pepper & creole seasoning |
1 1/2 water |
1/2 tsp. corn starch + 1/2 water |
Directions:
1. Saute onions, celery, bell pepper & garlic. 2. Add 1 1/2 cups water and seasonings. 3. Cook on low for 20 mins. 4. Add crawfish, cook another 10 mins. 5. Dissolve corn starch in 1/2 cup water and add to mixture 6. Cook another 5 mins. 7. Mix with cooked rice 8. Add green onions and parsley and mix well. 9. Ready to enjoy! |
