Ingredients:
1/4 cup(s) reduced calorie stick margarine
1 3/4 cup(s) onion chopped
1 1/2 cup(s) red bell pepper chopped
1 1/2 cup(s) green bell pepper chopped
1 cup(s) green onions chopped
4 clove(s) garlic minced
1/4 cup(s) all-purpose flour
1 1/2 cup(s) skim milk
1/2 pound(s) light velveeta cubed
1 1/2 pound(s) crawfish or shrimp peeled
1 tablespoon(s) worcestershire sauce low sodium
1/4 teaspoon(s) black pepper
1/4 teaspoon(s) ground red pepper
9 cup(s) fettuccine (1 lb uncooked)
fresh parsley sprigs optional
Directions:
1. Melt margarine in a Dutch oven over medium-high heat. Add onion and next 4 ingredients; sauté 5 minutes. Stir in flour; gradually add milk, stirring with a whisk. Add cheese, stirring until cheese melts. Stir in crawfish (shrimp) and next 3 ingredients; cook until crawfish (shrimp) turns pink. Add pasta, and toss well. Garnish with parsley, if desired.
2. Note: you can make ahead of time. To reheat, cover and bake at 350 degrees for 30 minutes.
