this recipe is from my friend Caleb's Cajun mother Ingredients:
1/4 cup butter |
2 tablespoons olive oil |
1/4 cup flour |
1 medium onion, chopped |
2 celery ribs, chopped |
1 green bell pepper, chopped |
4 garlic cloves, minced |
2 teaspoons cajun seasoning |
1/2 teaspoon ground red pepper |
1 (14 ounce) can chicken broth |
1/4 cup chopped parsley |
1/4 cup chopped chives |
2 lbs cooked peeled crawfish tails |
Directions:
1. melt butter with oil in a dutch oven. 2. stir in flour and cook stirring constantly 5 minutes or until caramel colored. 3. add onion and next 6 ingriedients and cook 5 more minutes. 4. add chicken broth, parsely and chives. 5. cook 5 minutes. 6. stir in crawfish and cook 5 more minutes. 7. serve with hot cooked rice. |
