half cup flour |
half cup butter, chopped |
1 bell pepper, chopped |
1 bunch green onions, chopped |
3 stalks celery, chopped |
1 onion, chopped |
1 can cream of mushroom soup |
1 pound crawfish tails |
1 teaspoon cayenne pepper |
dab salt and pepper |
Directions:
1. Melt butter and add flour. Cook, stirring constantly, until you get a good caramel color. 2. Add vegetables and saute until tender. 3. Add cream of mushroom soup and cook for about 5 minutes. Add crawfish tails and cook for 5 more minutes. 4. Add salt and pepper to taste and serve with crackers and chips. 5. Note: This will be quite thick, but Charles notes the longer it cooks the more the water will be released and the mixture will become thinner. |
