I think crawfish is mostly a southern thing, especially down around Louisianna, where most crawfish come from. You might find fresh crawfish, in someparts of the south, but most of the time, and in most areas, it will be frozen. Ingredients:
1 onion, quartered |
1 lemon, quartered |
1 garlic clove, halved |
1 bay leaf |
6 cups water |
1 tablespoon salt |
2 teaspoons red peppers |
2 lbs whole crawfish |
Directions:
1. Tie onion, lemon, garlic, and bay leaf in a cheesecloth bag. Place bag in large Dutch oven, and add water, salt, and red pepper, bring to a boil, and boil 5 minutes. Add crawfish and cook 5 minutes. Drain crawfish, peel and serve warm or chilled. |
