Cranberry White Chocolate Chip Cookies |

These cookies are amazingly decadent. I made them to give out for Christmas presents but my husband wanted to keep them all. Ingredients:
2 1/2 cups all-purpose flour |
1 teaspoon baking powder |
1/4 teaspoon salt |
1/8 teaspoon baking soda |
1/2 cup butter, softened |
1 teaspoon vanilla extract (almond would work as well) |
1 1/3 cups sugar |
2 large eggs |
1 3/4 cups white chocolate chips |
6 ounces dried sweetened cranberries |
1/2-1 cup slivered almonds |
Directions:
1. Place cranberries in a large bowl. Boil enough water to cover the cranberries, pour over berries and allow to steep for 8 minutes. Drain completely and dry on paper towels. 2. Combine flour and next 3 ingredients; set aside. 3. Beat butter at medium speed with an electric mixer until creamy and then add vanilla; gradually add sugar, beating well. Add eggs, 1 at a time, beating until blended after each addition. 4. Add flour mixture to butter mixture gradually, beating at low speed until blended. Stir in white chocolate morsels and cranberries. 5. Drop cookie dough by heaping tablespoonfuls onto lightly greased baking sheets. 6. If desired place almond slivers on top of cookie dough. 7. Bake at 350° for 10 to 12 minutes or until lightly browned on bottom. Remove to wire racks to cool completely. |
