Cranberry Walnut Salad With Maple Dressing |

My mom made this salad while we were visiting last weekend and it is spectacular! I like that the dressing packs a punch without any chemicals or high fructose corn syrup. Ingredients:
10 cups mixed baby greens |
1/2 cup dried cranberries |
2 granny smith apples, cored and thinly sliced |
1/2 cup coarsely chopped walnuts, toasted |
1/4 cup mayonnaise |
1/4 cup maple syrup |
4 teaspoons champagne vinegar |
2 teaspoons sugar |
1/2 cup vegetable oil |
salt and pepper |
Directions:
1. Whisk mayo, maple syrup, vinegar and sugar in a bowl to blend. Gradually whisk in oil until mixture thickens slightly. Add salt and pepper to taste. Dressing can be made up to 3 days ahead of time. Cover and refrigerate. Whisk before using. Toss with salad. |
