This recipe is a healthy morning muffin or can be enjoyed any time of day. My friend combined two recipes to make this one and it's my favourite ever since. It yields 50 muffins total but dough can be stored in the fridge for a couple of days for later use. Ingredients:
2 cups boiling water |
2 cups natural bran |
2 1/2 cups whole wheat flour |
2 1/2 cups all-purpose flour |
5 teaspoons baking soda |
1 teaspoon salt |
1 cup butter |
1 1/2 cups sugar |
4 eggs |
4 cups buttermilk |
4 cups oatmeal |
2 cups walnuts |
2 cups cranberries |
Directions:
1. pour boiling water over bran and let sit. 2. mix flours, soda and salt in large bowl. 3. cream butter with sugar. 4. add eggs and buttermilk. 5. add to dry ingredients and bran. 6. add oats, nuts and cranberries. 7. mix well. 8. fill in greased muffin tins. 9. bake in batches. |
