This recipe was given to me by a friend. My family enjoys these bars as is or topped with ice cream. Ingredients:
1/4 cup butter, softened |
1/2 cup sugar |
1/2 cup packed brown sugar |
1 egg |
1 teaspoon vanilla extract |
1-1/4 cups king arthur unbleached all-purpose flour |
1 teaspoon baking powder |
1/4 teaspoon salt |
1/4 teaspoon ground cinnamon |
1 cup chopped fresh or frozen cranberries |
1/2 cup chopped walnuts |
Directions:
1. In a large bowl, cream butter and sugars until light and fluffy. Beat in egg and vanilla. Combine the flour, baking powder, salt and cinnamon; gradually add to creamed mixture. Fold in cranberries and walnuts. 2. Spread into a greased 9-in. square baking pan. Bake at 350° for 30-35 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack. Cut into bars. Yield: 1-1/2 dozen. |
