This is a new take on Waldorf Salad. The cranberries give it zing, and the yogurt dressing is creamy and clean-tasting and it has just a hint of cinnamon. If you like, you can use a mix of half red and green apples and grapes. Ingredients:
1 1/2 cups chopped cranberries |
1 cup chopped unpeeled red apple (can use red and green) |
1 cup chopped celery |
1 cup seedless green grapes, halved (can use red and green) |
1/3 cup raisins |
1/4 cup chopped walnuts |
2 tablespoons white sugar |
1/4 teaspoon ground cinnamon |
1 (8 ounce) container vanilla low-fat yogurt |
Directions:
1. In a medium bowl, combine cranberries, apple, celery, grapes, raisins, walnuts, sugar, cinnamon, and yogurt. 2. Toss to coat. Cover, and chill 2 hours. 3. Stir just before serving. |
