Cranberry Stuffed Acorn Squash |

Similar to another recipe here, but with an orange twist. Ingredients:
6 acorn squash |
1/4 cup water |
1 lb fresh cranberries |
2 granny smith apples |
1 cup sugar |
2 tablespoons lemon juice |
3/4 cup fresh squeezed orange juice |
1 tablespoon orange zest |
1 teaspoon lemon zest |
1/2 cup chopped pecans |
Directions:
1. Preheat oven to 375. 2. Place squash cut side down in baking pan with 1/4c water in the pan. Bake for 45min until just tender. 3. Combine stuffing ingredients and distribute evenly among squash halves. 4. Return to oven and bake an additional 15min. |
