Cranberry Squares With Pineapple |

These squares are tart yet sweet. Great for pot-luck or holiday. Ingredients:
2 cups fresh cranberries |
3/4 cup crushed pineapple, drained (reserve 1/4 cup) |
1 1/2 cups sugar |
1/4 cup reserved pineapple juice |
1/2 cup oatmeal |
3/4 cup butter |
1 cup brown sugar |
1 1/2 cups flour |
1/2 teaspoon baking soda |
1/4 teaspoon salt |
Directions:
1. Combine first 4 ingredients in a pot. 2. Bring to a boil over medium heat. 3. Lower temperature and simmer until thick. (about 1/2 hour). 4. Set aside to cool. 5. In a large bowl mix remaining ingredients. 6. Spread 1/2 of mixture in a greased 9 x13 pan. 7. Press firmly. 8. Top with cranberry mixture. Then with remaining crumb mixture. 9. Bake in 400 degree oven for 25 minutes. 10. cool and cut into squares. |
