Ingredients:
2 cups cranberries, halved
1/3 cup walnuts, chopped
1 1/2 cups sugar, divided
1 egg
2 tablespoons butter, melted
4 teaspoons safflower oil
1 cup all-purpose flour
1/8 teaspoon salt
1/2 teaspoon vanilla extract
Directions:
1. Spray a 9-inch square baking dish with cooking spray.
2. In a bowl, mix cranberries, walnuts, and 1/2 cup sugar; spread mixture evenly in baking pan.
3. In a mixing bowl, mix together the remaining sugar and the remaining ingredients; stir mixture until smooth.
4. Pour over cranberry mixture.
5. Bake in a 350° oven for about 40 minutes or until top crust is light golden brown.
6. Cool at least 30 minutes.
7. Cut into squares.
