Cranberry Spinach Salad With Cranberry Dressing |

This is a wonderfully refreshing and tangy cranberry salad. My mom created the recipe, and it won a ribbon at the state fair! Ingredients:
1 (10 oz.) pkg. baby spinach |
3/4 cup craisins |
2 green onions, sliced |
1 (11 oz.) can mandarin oranges |
1/2 cup fresh cranberries |
1/3 cup sugar |
1/4 cup red wine vinegar |
1/2 t. salt |
1/2 t. ground mustard |
1/4 t. onion powder |
1/2 cup oil |
1/4 cup orange juice |
1/2 cup toasted slivered almonds |
Directions:
1. In a large bowl, toss together spinach, craisins, green onions, and mandarin oranges. 2. In blender, combine cranberries, sugar, vinegar, salt, mustard, onion powder, and orange juice. 3. Gradually blend in oil until emulsified. 4. Pour over salad. 5. Sprinkle with almonds |
