A lovely salad, I serve frequently with BBQ in the summer. Always well received. Ingredients:
3/4 c. almonds |
1 tbsp. sugar |
1c. dried cranberries |
3 t. toasted sesame seeds |
1 t. poppy seeds |
1/2 c. sugar |
minced onion to taste |
1/4 tsp. paprika |
1/2 c. white wine vinegar |
1/4 c. cider vinegar |
1/2 c. olive oil |
red onion, sliced thin |
small can mandarin oranges, drained, or 2 fresh oranges, segemented |
1 bag baby spinach |
Directions:
1. Toast almonds in heavy skillet. When toasted, add 1 Tbsp. sugar, cook till almonds are coated and candied. Cool. 2. Whisk seeds, sugar, seasonings, vinegars and oil. Chill 1 hour or longer to let flavors develop. Season with salt and pepper as necessary 3. Toss spinach, almonds, cranberries, sliced onions and oranges in large bowl. Pour dressing over, toss to coat. |
