Cranberry Special Meatballs |

My wife cut this from a local newspaper. We love just about anything Cranberry & this looked pretty interesting! Haven't tried it, yet, but will soon! Putting it on the Zaar for safe keeping.......& to share, too! Ingredients:
1 1/2 lbs ground beef |
1 (6 ounce) package seasoned stuffing mix |
2 eggs |
1/2 cup onion, minced |
1/2 teaspoon salt |
1/8 teaspoon black pepper |
1 (16 ounce) can whole berry cranberry sauce |
1 (12 ounce) jar chili sauce |
2 tablespoons light brown sugar |
1/2 teaspoon ground ginger (optional) |
Directions:
1. Preheat oven to 375°. 2. In a large bowl, combine everything EXCEPT the cranberry sauce, chili sauce, brown sugar & ginger. 3. Shape into 11/2 inch meatballs & place on a jelly roll pan or 9 X 13 cake pan. 4. Bake for 15-20 minutes or until firm. 5. In a medium saucepan, combine the remaining ingredients. 6. Cook over medium-high heat until mixture comes to a boil, stirring often. 7. Pour sauce over meatballs & serve. 8. Keep warm in slow-cooker, if needed. |
