When you want to get away from the rich chocolate ooey gooey rich desserts... sit down with this good cranberry slice and enjoy a cuppa coffee.... Ingredients:
1 cup butter, softened (margarine doesnt work) |
1/2 cup sugar |
1 egg yolk |
1 teaspoon vanilla |
1/2 teaspoon salt |
2 1/4 cups all purpose flour |
1/2 cup dried cranberries, chopped |
Directions:
1. In a mixing bowl, cream butter, sugar, egg yolk, vanilla and salt until light and fluffy. 2. Gradually add flour. 3. Stir in cranberries. 4. Divide the dough in half; form each half into a 6 x 3 x 1 block. 5. Cover with plastic wrap and refrigerate for 3 hours or up to 2 days. 6. To bake, cut the dough into 1/4 inch slices; place on ungreased parchment lined baking sheet. 7. Bake at 350 degrees for 12 to 15 minutes or until edges are golden. 8. Yield: 4 dozen |
