This is my favorite scone recipe I prepare every Thanksgiving. Tender, great looking and delicious for any holiday meal. Ingredients:
2 1/2 cups flour |
2 1/2 tsp baking powder |
1/2 tsp baking soda |
dash salt |
3/4 cup cold butter cut up |
2/3 cup sugar |
1 cup fresh or frozen cranberries coarse chopped |
3/4 cup buttermilk |
Directions:
1. Combine the dry ingredients. 2. Cut in butter till fine crumb consistency 3. Stir in the cranberries and enough buttermilk with a fork to make a moist dough ( not wet ) that sticks together 4. Knead with floured hands briefly 5. Form into a large ball and pat onto baking sheet into a 1/2 inch thick circle or so. 6. Cut wedges with sharp knife 7. Bake 400F , about 20 + minutes or until puffed , browned and tested done. 8. Cool scones on baking sheet on cooling rack. 9. When cold ,again cut through to separate scones. 10. Serve warm 11. Freezes and reheats well. |
