Here is a great way to use up that cranberry sauce after your turkey dinner. Ingredients:
1 cup flour |
1/2 cup whole wheat flour |
1 cup oats |
1/3 cup brown sugar |
1 tablespoon baking powder |
1/2 teaspoon baking soda |
1/2 teaspoon cinnamon |
1/2 teaspoon salt |
1 1/2 cups cranberry sauce |
1/2 cup skim milk |
1/3 cup applesauce |
1 egg |
topping mix |
1 tablespoon margarine |
1/3 cup brown sugar |
1/3 cup flour |
1/2 teaspoon cinnamon |
Directions:
1. Heat oven to 400°F Spray your muffin tins. 2. Mix together topping ingredients and set aside. 3. In a large bowl, combine flours, oats, brown sugar, baking powder, cinnamon, baking soda and salt; mix well. 4. In medium bowl, combine milk, applesauce, cranberry sauce and egg; blend well. 5. Fold into dry ingredients all at once; stir until dry ingredients are moistened. 6. Fill muffin cups about three-quarters full. 7. Sprinkle with topping. 8. Bake 20 to 22 minutes or until golden brown. |
