From chef Jose Garces. Ingredients:
1 cup water |
1 cup sugar |
2 large cinnamon sticks |
4 allspice berries |
3 whole cloves |
2 whole star anise |
2 cups fresh cranberries (can use frozen) |
2 granny smith apples, cut in large dice |
3/4 cup cointreau liqueur |
1/2 cup ruby port |
1 (750 ml) bottle fruity rose wine |
1/2 cup ruby port |
1/2 cup cointreau liqueur |
1/2 cup unsweetened cranberry juice |
Directions:
1. Combine water, sugar, cinnamon, allspice, cloves and star anise in a small saucepan. Bring to a boil over high heat, stirring occasionally. 2. Remove from heat and cool to lukewarm. Strain through a fine-mesh strainer into a 3-qt container with a tight-fitting lid. Discard solids. 3. Add cranberries, apples, Cointreau and port to container. Seal and refrigerate at least 4 hours, or up to overnight. 4. Add wine, port, Cointreau and cranberry juice to container. Stir well, refrigerate until cold, and serve over ice. |
