This festive dish is a sweet and spicy spin off of your everyday salsa. We eat it with tortilla chips, but I would imagine it's wonderful as a condiment with Turkey and all the trimmings! Ingredients:
1 bag (12 oz) fresh or frozen cranberries |
1 granny smith apple, peeled, cored and cut into eighths |
1/2 large green pepper cut into large chunks |
1/2 medium red onion, cut into large chunks |
3/4 cup sugar |
1/3 cup apple juice |
3 t chopped fresh cilantro (or more if you are a cilantro lover like me) |
2 t chopped fresh jalapeno pepper |
1 tsp grated lime zest |
Directions:
1. Put cranberries, apple, green pepper and onion in food processor 2. Pulse until chopped 3. Transfer to large bowl 4. Stir in remaining ingredients until blended 5. Cover and refrigerate |
