This salsa is wonderful over cream cheese and served with crackers or corn scoops. Ingredients:
1 (12-oz.) bag fresh cranberries |
1/2 c. sugar |
2 t. orange juice |
1/2 cucumber, peeled, seeded and diced |
2 stalks celery, chopped |
4 slices jalapeno, finely chopped (the kind in the jar) |
Directions:
1. Place the cranberries into a food processor and pulse until they are finely chopped, but not mush. Pour into a bowl and add the remaining ingredients. Stir well. Let it sit at room temperature for 15 minutes before serving to let the flavors blend. |
