Cranberry Salad with Port |

I got this recipe from a very dear friend. It's a nice change from standard, boring cranberry sauce. I make this every Thanksgiving. Ingredients:
12 ounces cranberries |
1 1/2 cups sugar |
1 cup tawny port |
1 teaspoon freshly grated lemon, zest of |
2 tablespoons fresh lemon juice |
Directions:
1. Combine all the ingredients in a saucepan and simmer, stirring occasionally, for about 20 minutes or until the berries burst and the mixture has thickened. 2. Pour into a bowl or a mold and refrigerate. 3. Serve at room temperature. 4. NOTE: You can substitute orange juice and orange zest for the lemon. |
