Cranberry Roasted Garlic Risotto |

2 tablespoons butter or 2 tablespoons margarine |
3 garlic cloves, roasted |
1 small onion, diced |
3/4 cup arborio rice |
2 cups chicken broth |
3/4 cup dried sweetened cranberries (ocean spray craisins original) |
1 tablespoon parmesan cheese |
Directions:
1. Preheat oven to 400ºF. 2. Grease a covered casserole dish. 3. Melt butter or margarine in a large saucepan. 4. Add roasted garlic and onion; cook over medium heat until soft. 5. Add rice; cook for 2 minutes. 6. Add broth and sweetened dried cranberries; bring to a boil for 2 minutes. 7. Pour mixture into casserole dish and bake for 25 minutes. 8. Stir in cheese and serve immediately. |
