Super for fall meals. Very tangy, yet subtle flavor. Great with some crisp, roasted vegetables and warm potatoes. Ingredients:
4 lbs pork roast, boneless & tied |
salt & pepper |
1 (16 ounce) can whole berry cranberry sauce |
1/4 cup chopped yellow onion |
3/4 cup orange juice |
1/4 teaspoon cinnamon |
1/4 teaspoon ginger |
Directions:
1. Rub roast with salt& pepper. 2. Place on roasting rack in pan. 3. Cook in 325 degree oven for 2 1/2-3 hours, or until meat reads 175 internally on meat thermometer. 4. In the meantime, combine remaining ingredients in a saucepan, bring to a boil and remove from heat. 5. Halfway through roasting, beign basting with cranberry mixture. 6. The remaining mixture can be served on the side with the thinly sliced pork. |
