Juicy cranberries and crunchy pine nuts dress up the rice in this side dish. The suble flavors make it a good side dish for many entrees. Ingredients:
3/4c chopped celery |
1/2c chopped onion |
2tbs butter |
1tbs olive oil |
1c uncooked long grain rice |
21/2c chicken broth |
1/2c chopped mushrooms |
1/2c dried cranberries |
1/2tsp garlic powder |
1/2tsp curry powder |
salt and pepper to taste |
2tbs minced fresh parsley |
3tbs pine nuts,toasted |
Directions:
1. In lg. saucepan,saute celery and onion in butter and oil till tender. Add rice;cook and stir for 5 mins or till lightly browned. 2. Add the broth,mushrooms,cranberries,garlic powder,curry powder,salt and pepper. Bring to a boil. Reduce heat;cover and simmer 2o mins. or till liquid is absorbed and rice is tender. 3. Remove from heat. Stir in parsley;sprinkle with pine nuts. |
