Light and fluffy bread. Cranberries really enhance the pumpkin. This recipe makes a lot of bread. Ingredients:
4 cups flour |
2 tablespoons baking powder |
1/2 teaspoon baking soda |
2 teaspoons ground cinnamon |
1/2 teaspoon nutmeg |
1/4 teaspoon ginger |
2 cups sugar |
2 cups canned pumpkin |
4 large eggs |
1/2 cup oil |
1/2 cup water |
2 cups cranberries, coarsely chopped |
Directions:
1. In a medium bowl stir together flour and dry ingredients. 2. In large bowl mix sugar, pumpkin, eggs, oil and water. 3. Add flour mixture and mix well. 4. Fold in cranberries. 5. Pour into greased and floured 8x4 pans. 6. Bake at 350 degree for 1 hour or until toothpick inserted comes out clean. |
